2 Minute Banana Pancakes

I will start this post by saying I give all the credit for these delicious pancakes to my friend Jen who gave me the recipe shortly after I had my son Max almost 5 years ago. Life is so busy, it’s easy to plug and play with frozen waffles, cereal or prepackaged food for breakfast, but I like knowing I’ve made something healthy from scratch for them.

When my son was about six months old I was looking for new foods to expand but I fed him and my girlfriend gave me this recipe. I love it for lots of reasons, including:

  • It’s easy
  • It is full of nutritious foods, including a nice dose of protein
  • it’s a great first food for a baby to start eating because it falls apart easily (more flower will make it easier to pick up and stick together, less flour will make it a very easy first food that crumbles apart.
  • It’s a super way to use old bananas (the browner the better.

The ingredients list is really simple:

  • One banana
  • One egg
  • 1 Tbsp flour (more or less for consistency)
  • Dash of Cinnamon
  • Butter (only to grease the pan)

Turn the stove on low to medium heat, and there you have it. Simply mush the banana, stir in the egg, flour and cinnamon, and you’re done!

This recipe makes for small, easy to hold pancakes for little ones. I’ll be the first to admit I usually eat a portion of the batch too, and usually go heavy on the cinnamon! Enjoy!
